Maple Cashew Bites

Maple Cashew Bites

I love to have an easy and sweet treat on hand to satisfy the inevitable mid day snack attack. These simple and tasty bites are gluten and dairy free and REALLY easy to make while providing a dose of healthy fats, fiber and protein

Makes 12-14 balls

  • 1 cup cashew butter (or nut butter of choice)

  • 1 cup quick oats coarsely blended in food processor or blender

  • 1/4 cup pure maple syrup (or chopped and soaked dates)

  • 1/4 tsp pink or sea salt

  • 1/2 cup cacao nibs (optional)

  • Mix all ingredients together in a large bowl ( I use my hands, it’s just easier to blend all the ingredients, plus you’ll be rolling them into balls anyways)

  • Form into balls and place onto a plate

  • Put into freezer to firm up (about 15 minutes)

  • Store in the fridge

  • Before freezing, roll the balls into sesame seeds, coconut flakes etc for an extra hit of flavour

  • Add dried fruits or seeds into the balls for added nutrition and taste

I would love to know if you make these and what flavour combos you come up with!
