Zucchini + Herb Slaw
I threw this recipe together deep in the throes of a summer heat wave as a refreshing side dish. However, I have come to realize that it is an awesome side/condiment/ salad no matter the time of year! Zucchinis are also still (sorta) in season in Toronto so every weekly farm share delivery I get usually has about a pound of zukes.
This is probably one of the easiest dishes you will make all week! I last made it two days ago as a salad base for some baked salmon and it was fresh and tasty and a perfect pairing.
ZUCCHINI & HERB SLAW RECIPE (serves 3-4)
Prep Time: 5 minutes Cook Time: 2 minutes
1-2 small to medium zucchinis shaved into ribbons ( I used a vegetable peeler but you could use a spiralizer too)
juice of 1 lemon
1 tsp organic olive oil
handful of chopped fresh herbs such as basil, mint, parsley and/or tarragon
sprinkle of sea salt and cracked pepper to taste
Shave zucchini thinly with a vegetable peeler into a medium bowl
Add in lemon juice, oil, herbs and salt and pepper
Lightly toss to coat the zucchini
